Working on tweaking my sourdough recipe… the starter is about five years old. It’s been fed on three continents and five countries over the years…

No steam, no dutch oven, no bannetons, no baking stone, no fuss.. 8 hours start to finish.

I found a reliable source for alligator in CBus. It ain't cheap, but beggers can't be chosers. This summer I'm going to make my Cajun Alligator Sauce Piquant

I had a food truck roll through here last month. Dude gets his stuff from Lafayette.
1 pound of Gator filet
1 pound of gator nuggets (already breaded)
2 links of fish boudin
2 links of sausage
some ribeye stuffed jalapenos

That smoked corned beef rib plates looks bomb. I have a rib eye, some skirt stake and a whole chicken have to get busy cooking soon. Just not sure what I want to do with them. The skirt steak for sure will be carne asada and I'll probably season and do the rib eye in some beef tallow and butter, maybe a few fresh herbs.

No pics, but had dinner at Chouette in downtown Columbus this evening. Probably one of the best meals I’ve ever had.

Bacon tarte appetizer was ridiculously good and then I got the trout with cauliflower and capers for the main. I don’t love fish and really dont like cauliflower or capers, but was feeling adventurous, so I picked against my normal taste.

It was so unbelievably good that now I’m going to have to go back to try everything on the menu. If they can make me like that dish, then I can only imagine what they can do with something I really like.

Service was impeccable, too. They needed to shift us over one table while having our appetizer to accommodate a larger group — not a big deal at all — and comped us the appetizer as a result. Completely unnecessary but truly appreciated.

Adult beverages were excellent and sneaky strong, too.

5* experience and I can’t wait to go back.
