I found a reliable source for alligator in CBus. It ain't cheap, but beggers can't be chosers. This summer I'm going to make my Cajun Alligator Sauce PiquantStepping (slightly) outside the box today

That smoked corned beef rib plates looks bomb. I have a rib eye, some skirt stake and a whole chicken have to get busy cooking soon. Just not sure what I want to do with them. The skirt steak for sure will be carne asada and I'll probably season and do the rib eye in some beef tallow and butter, maybe a few fresh herbs.A few things here:
