I settled on a Mardi Gras menu
Appetizer: Cayenne toast with goat cheese and sun dried tomato spread
Soup: Crab and Corn soup
Side: Creole Spinach Mousse
Main: Crawfish etoufee
Dessert: Chocolate and Cream Bourbon Pie
Drinks:: Hurricanes
Coffee: Cafe au Lait

The only criticism I had was the etoufee needed more salt and the pie was too runny. Everything tasted great

Funny N'awlins story. When my wife and I used to spend a lot of time there Commander's Palace was our go to place to eat. It was a bit ritzy but so worth it. Every day we'd either have lunch or dinner there. My style is I like black slacks and a white shirt. When we went during the day we'd take the street car there and back but for dinner we;d taxi back to out hotel. When we did this there was about a 99% chance that I'd be mistaken for a valet

I cooked it all myself. Cajun/Creole cooking is my hobby
I started at 8:30 and went all the way to 5:00 pm. It was a lot of work (and expense) but worth it.
