so figure 20-30 minutes to chop everything (i like to have everything chopped before i start)

bare minimum of an hour to make a proper roux, probably closer to 1-1/2 hours

give or take 20 minutes+ for the trinity to cook down a bit.

15-20 minutes of cooking chicken before adding liquid (add the sausage for last maybe 5-10 minutes).

then a good hour to 1-1/2 hours of simmering once it comes to a boil.

We once had a dog named Pup because when we got him he was a pup and we never named him, referred to him as "the pup" his whole 15 years of life.

counting prep time, probably around 3-4 hours

Our German Shepherd pup was in his glory chasing butterflies.. so daughter named him Cassius Clay for dancing like a butterfly
And we called him Cash.. beautiful animal that fearless was a perfect adjective

We got Max at an Amish pig farm near Bolivar... He literally fit in my hand.. so little.. smartest dog I ever knew.. actually had a vocabulary.. used different tones.. we swore he had one that said 'I want toast'.. was the Alpha day 1 and let all the bigger dogs that came after know.. the road to Alpha starts right at my ass..
Marshall Dillon got his name because it was obvious he was going to be a very BIG collie and he lumbered.. such a slow gait..
