Before the game at Lex got some Gumbo here but could get no tomatoes :-(

I'm thinking of giving this a try this weekend. I'm a little nervous though because I haven't had beer since Summer of 2020 when I gave it up as a concession to gout.

I am gonna get some strong Belgian dark ale today tho... if my dude doesn't have bleu, I think I saw some Trois Pistoles down there the other day.

The meatballs are veal, pork and beef, they were ground into a spinach ricotta to stuff the ravioli.

Thanks! I have to say, it was quite tasty.
Yes, it was also freshly made. San Marzano tomatoes, garlic, onion, crushed red pepper, salt, sugar, oregano and some wine.

So, I made it last night, and maybe I missed something. Because my pot didn't come out of the oven after three hours looking anything like his. Mine had a huge amount of braising liquid left. I had to remove the meat and onions and then spend 20 minutes reducing all that liquid down and then mixing everything back together again. It was really good at the end though. I need to watch the video again and see if he put it in the oven without a lid because there's no way he could have reduced all that liquid down with a lid on.
