I followed the recipe pretty closely.
400ml of beer + ~1C of water.
Couple of T of flour. Made sure the onions were fully caramelized.
Lid was on the entire time.
Mine didn't have too much braising liquid left.

tomorrow is Mardi Gras day.
a day that i try to actively avoid.

so when my parent requested i boil the crawfish tomorrow instead of watching th damn parade, i said “HELL YEAH!! I’ll bring my pot & burner, a big ass PA for the music and beer”
one sister bring the crawfish.
other sister bringing all of the fixings.

gonna be a great day ignoring the parade passing right in front their house. :slappy:

I used to go to N'Awlins for Jazz Fest, French Quarter Fest and Christmas but I've never gone for Mardi Gras

i avoid New Orleans like the plague.

other than the airport, i couldn’t tell you the last time i stepped foot in that shit hole.
probably a Pelicans game a few years ago.

which sucks because any concert worth a damn that comes to Louisiana is going to be in NOLA.
