something about those marshes provide better feeding for all types of seafood.

Living in the city if I were to have a pit in my backyard, at least living where I live, surrounded by boomers, I'd get a air pollution complaint. I never even smell wood stoves or chimneys anymore. Down in the barrio though where the Mexicans and central Americans live it's all good. I'd live down there with them but the only problem is they like blaring their music until 3am. That's one of the nice things about living around boomers and gen xers like myself, we respect each other's boundries and try to keep our yards up and not make noise.

Now that's gumbo.
My wife wants gumbo soon. Gonna follow your recipe.. A trick I had learned years ago was to bread and fry your chick before, use the oil you fried the chicken in to make the roux

Got both of them salted, deboned, and tied back up. Chilling in the fridge. Now we wait. Might even do some yorkshire pudding since we forgot to get bread and there's no fuckin way I'm going to a store today or tomorrow lol
