Also, this has a self basting lid and I have the trivet/rack thing
So I think its a meat based cooking machine.

See... I was thinking that but like first cooking like brisket or maybe a roast in there and then building the chili over top of that once its cooked.

Yes indeed, adapted by my wife (by adding lots of sausage for starters) from a Joanna Gaines cookbook, because we are all about that Magnolia life.But it sure was a crowd pleaser.
I have done it in the smoker before, there may be pics in this thread, but you gotta time up the ingredient adds and blanche the potatoes and corn (i think I did that)
