Green chili cheeseburgers.Green chili in or on your eggs in the morning. On a steak. Green chili is a condiment and can be used creatively. It's chili roasting time right now and most food stores are roasting out front. You buy a bushel and have them roasted to burn off the tough skins and add a roasted flavor. You can roast some on your grill and put them hot into a freezer bag to let the skins fall off. You may still end up picking skins off by hand. Magnifico!chiliroasting.jpg And that smell! Oh My!

Get that...but have never seen HOT (and apparently these are HOT) hatch/poblano/anaheim peppers before. Surely you got something? (Thinking I just got taste one before making a batch of chile verde).

Here's the thing. You can buy Hatch chili marked "medium" or even" hot" and you just don't know what you'll get! I have jars of chili marked "medium" and some are as hot as a jalapeno! Or not very hot at all! :lol:

Was really looking for some local knowledge here Taos:drunks:. Cook with chile alot. These are different so I'll do some experimenting. BTW, got this in the 90s and still one of my favs:

I currently buy "Sante Fe Ole" brand chopped green chili. I'm lazy most of the time but have been buying some fresh roasted locally chili for a treat. Stay away from any brand that has vinegar in it's ingredients. Let me look at some local recipes......
