I’m not ashamed to admit my affinity for the Kraft box.

Hell, i almost posted a pic of the Chef Boyardee Ravioli i ate for lunch today.
I've been eating kraft mac and cheese for lunch quite a lot since.. I guess about December I started having a hankerin. It was one of the first things I ever learned to prepare, as a kid. And, dammit, it may be powdered cheese, but it's fuckin good.

Alright, so I have been fucking around with my deep fryer as a reward for racking up 100 mile weeks on my bike..

So, some back story... I had acquired julia childs "the way to cook" a few weeks ago. (Its ridiculously amazing). I also had bought a bigass package of meat during the shortages from covid... And one of the things was this bag of 2 cut up chickens... (Though they shorted me two thighs)

Well you kinda have to thaw it all out at once..

So last week, I was perusing the book and its got this box on a fish page like, "use fresh bread crumbs for sauteing with butter or deep frying"

So the whole thing here is...

Dredge in flour salt and pepper.
Egg wash is one egg, one tsp of oil, dash of salt (x6)
Fresh bread crumbs which was supposed to be "white bread with body" which my wife got me a sourdough loaf from Aldi which I zapped in the food processor. (Well half of it)

And that is it.

Key point. Do the dredge... Pat on the crumbs and let it sit 30 minutes.

(You say there's not much spice there. Well it will take the hell out of some hot sauce - i did both texas pete and some habanero to great effect)

So... Then pull the same move with some scallops and walleye but this time with panko from the store... Still pretty good. Dusted these with cajun spice as they came out... Really nice.

Korean-style (no recipe just "culturally appropriated") pork and vegetable stir fry. Served it over rice. I need to reseason my wok.

start with the “Holy Trinity” plus 2. (Fab 5?)

i used a purple onion and a red bellpepper tonight but regular yellow onion and green peppers work pretty much identical to these.

Celery, Jalapeño and Garlic (again i use the purple kind) round out the Quintet
