Thread of What You've Eaten, Cooked and/or Drunk Lately

"White Trash" cooking can be some of the best cooking America has ever offered up. After all, weren't most of the early immigrants (outside of some clergy in Boston/NY/Virgina) white trash trying to get out of England?
I would posit "slave cuisine" has had the biggest, most original impact on 'murican cuisine followed by Mexican. The white trash Yankee cuisine is pretty simple and boring (though I have a soft spot for Pennsylvania Dutch cooking).

And Scotland and Ireland and Spain (like really spain early on if you weren't Catholic) and France (same thing)

I'd say poor rural white trash cooking is pretty good. Fried everything with biscuits and other poor farm dishes are the backbone of America. Then there's the recipes on the back of Campbell soup cans.

It depends on which white ethnicity you're talking about. If you mean beans on toast from England or Irish porridge then yes. Let's not forget that French are white, Spaniards are white, Germany immigrants cook some great food, Italians, Greeks and lest we forget Portugal. Eastern European food anything to write home about either. I think what's considered "white food" today is highly processed foods that come in cans or boxes. fast food. It doesn't belong to any real ethnicity and all races eat them but sine people with light skin are still the majority it gets called "white food".

I just want to say that I love tradional soul, or slave food, whatever you want to call it. Fried chicken or maybe chitlins with blackeyed peas, some collard greens with some sausage or ham thrown in, some good corn bread to mop up the juice. That's some happy eating. Let's not forget though about our traditional farm breakfasts. Bacon or sausage or ham with eggs, fried potatoes, toasted bread with real farm churned butter, coffee, juicem maybe some corned beef hash smothered in white gravy. We have pancakes, eggs benedict, eggs scrambled with a variety of ingredients including wild mushrooms topped with fresh farm cheese. Suppers consisting of cheap ingredients including a chuck roast braised to perfection with root vegetables and a pan gravy. Green beans from the garden slow cooked with bacon and onions. Roast beef, pork chops, yorkshire pudding, mashed potatoes, Boston baked beans... White America has some good food but you can't be lazy.

French, Italian, Spanish, German, and African (multiple countries) are all huge influences on Louisiana cooking.
Mix that with some Coonass Ingenuity (figuring out you can eat damn near any critter you find in the swamps) and you got some damn good cooking.

Jambalaya es basically Spanish paella. Etouffee is french with local critters thrown in. Muffalatta is Italian. Gumbo is the African creole,unless you put tomatoes in it. Then there's this

I know this is odd, but I love fusing Chinese and Mexican food, specifically Chinese protein into Mexican dishes....General Tso's quesadillas, Chinese sliced pork tacos, Kung Pao burritos....it just works dammit. I got the idea from an old DDD episode, maybe first season or so....a gas station/restaurant I want to say in the SW corner of the country.

We have this place in Phoenix that's been around for years. Gen Z thinks their name is racist though
