want your liquid to be to top of but not completely covering your noodles

note: the gator bath will lighten the color a bit. which is why we don’t stop too early on the onions.

i use:
Kosher Salt
Crushed red pepper
garlic powder
Bullock’s 9spice

tourists will use Tony’s or Slap ya Momma or something like that, but Bullock’s is simply better.

Well i must be really lucky in ribs and have shit luck in all other facets of life lol. On my 3rd rack and all have been perfect

may or may not have shared the back seat of an NOPD squad car with the middle brother after LSU basketball lost a final four game (‘05-ish?)

may or may not have been pounding tequilas with the owner when Houma PD ransacked the messican bar we were at a couple years ago.
