Drive north (take I-59 out of Birmingham) till you get to the Chattanooga area; you're likely to see some snow there at altitude. If you don't see any there, head up north on I-81 toward Bristol, but then take I-26 east toward Johnson City and then get off the interstate and head toward Boone, NC. You're very likely to see snow at altitude there in January.

Sugar Mountain Resort in North Carolina. If you're not there to enjoy the natural 70" of annual snowfall, they'll manufacture snow for you.

If you want to do it on the cheap look for anything around Boone, NC (as MaxBuck said) such as Blue Ridge Village in Banner Elk, NC. You can sign up for one of those mandatory 2-hour tour promos at Blue Ridge and get a 4-day condo stay for under $200.

I think you have done a great job here.

Suggest looking for old Andy Williams Christmas specials, or perhaps the old movies "Holiday Inn" or "White Christmas," and calling it good.

The other option is going to the state fair, ordering a Sno-Cone without syrup, and telling the family, "It looks just like this."
