MLB has a players union and a collectively bargained agreement. College football has neither and are students to be protected by the University.
Unions and/or collective bargaining are not relevant in this case. The only legally binding documents are whatever the parent/student signed (like the LOI and any other documents to get the scholarship, etc.). Unfortunately these documents were undoubtedly written by the school's (and/or NCAA's) lawyer(s) and probably doesn't bind the school to do very much or even make them liable for anything. Regardless it would be interesting to see the "fine print" in these documents just to see if the school is even required to have a football team, etc.
