I used to eat them fairly regularly, they make a fine meal-but the body of water does play a big part in their taste. I prefer a largemouth from the Connecticut river over Seneca Lake, that's for sure. The flesh is firmer the colder the water is, too.
Smallies are also really good-but I wouldn't put them over walleyes/yellow perch. I have issues with killing bass, but I don't mind keeping 30 perch and firing up the vacuum sealer. The only time I eat a bass these days is when one of my dipshit buddies hooks them so deep it isn't worth releasing them.
