Thread of What You've Eaten, Cooked and/or Drunk Lately

Thai green curry with shrimp for the protein. I was a little low on the curry paste, hence the whitish color, but added some homemade sambal oelek to give it a bit more kick.

Excellent choice! You inspired me to use up the last of the curry paste I made and froze last fall. Chicken for the protein, carrots, red bell peppers, and bamboo shoots for the veg. IMG_2868.jpeg

A quick, easy “food as fuel” lunch I’ve been doing fairly regularly is an omelette made from a cup (half a carton from Costco’s six pack) of egg whites plus one whole egg for color and flavor, a little melted cheddar or feta cheese, and sautéed broccoli and onion, sometimes with some cauliflower mixed in. I’ve got a nonstick pan that lets me do it without using any butter or oil, and tarragon from the garden, pepper, and a little salt makes it taste pretty good. Sometimes I add half an avocado. Here’s a shot:

I make a similar omelette of 2 eggs + egg whites from Costco several times a week. Sometimes with a baked potato, sometimes with buttered toast, sometimes all alone. Only meal I've had so far today, in fact.
