jambalaya is a great "whatever meat" dish. I sued to have this giant cast iron skillet that I bought there at the french market in N'awlins, it was my jambalaya pan. My wife talked me into getting rid of it, can't remember the reasoning but I miss it. I think it was because, according to her, it always looked like it had never been washed. She doesn't understand "seasoning" a pothad it hand delivered to me by a friend who gets gator tags every year.

I have 2 nice sized ones back home in Louisiana.
when I get a bigger place (or place with bigger kitchen) out here, they're coming with me.mine was essentially a pot, probably about a gallon and a half sized

Never had Nutria, but had Cuy (Peruvian Guinea pig). It was okay. Not bad but probably only notable because of what it was rather than anything taste wise. Maybe it was how it was prepared.
Alligator is damn good. I had some chopped and blackened gator tail just a few weeks ago. Hopefully those Tigers get their fill this weekend at Death Valley!
