i cannot speak to every state, but i have eaten in my fair share of them.

but Louisiana and Texas are just different than the others i’ve visited.

Louisiana is really 3-4 very distinct regions that are very different from each other culturaly and cullinarily.
all but 1 of which are grossly overrated and need to be evicted from the territory.

and texas is just so damn massive it might as well be several states.
the west edge is so damn far from Houston it might as well be another planet.

makes it very difficult to name one dish as representative of either state.

I think that they had viewers of their channel from each state vote for the dish in this video. Agree that pretty much every state could have at least 3 dishes dedicated to them.
