This is undeniably true. However I prefer a 6 hour freeze today.

Bought a pretty run of the mill supermarket Porterhouse, so I did the Gordon Ramsey thing and basted the hell out of it with butter, garlic and rosemary. It turned out to be quite good.

I've had some corned beef in the sous vide since noon yesterday. Still got about 9 hours. Going to make a potato soup to go along with a Rueben.
