Anyway, scrapple, as I know it, was just pig scraps, maybe some organ meat (I prefer it without livers), boiled or slow cooked for a long time then loafed. After it chills we'd have it sliced and fried in crisco in a cast iron skillet. Bun. Mustard. Onion.
I have seen food shows where people will fry it with eggs. Another regional thing in...New England maybe, was to use it as an ingredient in hash. I've only ever had it on a bun.
I saw an episode of Bizzare Foods where Zimmern went to Penn/Maryland somewhere and mofos put grape jelly on it. Gross.
