I charred the outside to peel the waxy skin off, cut a slit in them and stuffed them with this pepperjack cheese my wife got from Yutzy's farm market. Rolled them in flour, then dipped them in an egg mixture and fried them. Man, were they hot. I had to drink the beer I had sitting there and I'm even MORE smoked.
