Theory on your waiter

He's my best guess...Sometime shortly after the release of the movie "Rudy", this chap (or is it chapped) dropped out of CSU and made a trek to South Bend to live out his lifelong dream. He had chosen CSU but was originally from Gary (IN that is) and wanted to play football. Back at ND, he was arrested trying to break into the stadium (he heard something about free lodging) and spent 6 months in lock-up. During this time, he developed a close intimate relationship with a priest who explained that IF he committed to the 'hood' he could go to 'that school' for $29K. Upon release, he re-enrolled with the new 'major' but broke his leg on the first play of walk-on tryouts, thus ending his illustrious career in the gold helmet under the gold dome, and of course his vocational interest in the clergy. At this point he decides to rehab and go back to CSU, but his leg never quite heals and his career (generous characterization) just sort of fizzles. So he takes a job at the dining establishment you visited working for his high school girlfriend's former step-father. You see, he never actually said he went to Notre Dame but obvoiusly has managed to blend anger with ignorance. Having said that, since we of such good fortune are blessed to simply have the enlightened perspective we do, we should always take advantage of opportunity to spread love and demonstrate our good hearts...I would have offered an OSU shirt or perhaps a leaf for his headwear...or if he didn't feel like being civil, then anywhere else he felt like sticking it.
