Thread of What You've Eaten, Cooked and/or Drunk Lately

I got stupid on Saturday and bought 3 flash food produce boxes for $3 each, yielding 42 bell peppers, 10 tomatoes, a container of grape tomatoes, a dozen jalapeños, two ears of corn, 6 cucumbers, and 5 avocados.

Then spent all day yesterday roasting peppers and cherry tomatoes from the garden in the oven, blanching, peeling and seeding the store tomatoes, chopping other herbs and vegetables, and then making and freezing a bunch of sauces. 3 quarts of romesco, 3 quarts of pasta, two quarts of salsa, and 2 quarts of a curry. We still have romesco sauce in the freezer from the last time I did this, but I’m such a sucker for cheap produce and hate throwing away food.

Certain stores (Meijer and Giant Eagle around here) sell discounted food when it’s close to its expiration date. Most of it is crap that nobody wants but the Meijer in Westerville has $3 boxes with a bunch of vegetables in them. The boxes from the Meijer in Grove City always have a bunch of onions and potatoes and maybe a few peppers for $5 so no real savings. But the Westerville one has mostly peppers, tomatoes, and cucumbers for $3.
