The rib's been in for almost two hours. Going to get it almost there at 215-230 and then crust the motherfucker for five or ten minutes at 500°. Makimg some au jus with the pan drippings,, some horseradish creme franchise along with goose fat roasted potatoes and asparagus with hollandaise.

Martini and two kinds of (Scottish and Pacific NW Sockeye) smoked salmon while the Prime Rib was finishing up.
Beef: It's what's for dinner. Drank some Chateau Purcari Negru with it.
Espresso and Russian Opera Cake for Desert
Despite the espresso, I food colma'd out after this and slept through the third quarter. Woke up at the beginning of the fourth and poured myself a wee dram of Aberlour to keep my mind limber.
