Fatty pork belly, bacon, slow smoked pork shoulder/butt pulled and doused with vinegar sauce, tacos al pastor, carnitas cooked in citrus, stuffed pork loin, pork schnitzel, etc., etc., etc. There is no other choice. I like it with a tall glass of milk.

If it's a last meal kind of thing, then steak (beef).

Pork though has the most to offer from Pata Negra Jamon, to sausages and salumi, pancetta, prosciutto, English Pork Pies, good old fashioned 'Merican bacon and smoked hams, Carolina pulled pork butt, rendered lard used for bread or pie crusts.

The pig is king, gentlemen.

Do you guys get good meat in Ohio? Do you know if you get good meat?

I lived in San Francisco for a couple of years. They had crap beef and pork, and didn't know it. Their chicken was pretty grim as well. Compared to the stuff I grew up with in Nebraska, it was nasty. Of course the seafood was 1,000% better than the Midwest, but that's to be expected.

Now that I'm back in Nebraska I pretty much eat local fish only, and skip most coastal fish - aside from shrimp, which is an essential ingredient in a meal I really like to make. But I'll eat beef like it's going out of style if I let myself. Mostly we eat chicken these days, but when it's time to eat beef, look out.

The best beef I've gotten in Ohio has been the Hereford beef at The Fresh Market and the dry-aged rib steaks available at Whole Foods. You'll pay plenty for the dry-aged stuff, but for a special occasion it's worth it. And these days, beef is a special-occasion meal for me.
