would a restaurant specializing in authentic South Louisiana food be successful up there?

and I don't mean a non-coonass trying to cook dishes that we serve here.

I'm talking a real schmuck from down here going up and opening a restaurant.
Jambalaya
Gumbo
Boiled seafood
etc.

would it work?
 
Pretty good cajun/creole place in Indy called Yats. Owner is from New Orleans. Been open for many years.

Don't know how it compares to the official local stuff, but I love it.

with a name like Yats, he's got to be from New Orleans.
that's one of those nicknames non-locals just don't hear often enough to steal.
(don't remember which part of the city, but there is a group of New Orleanians referred to as Yats).

I Cbus, yes. It would be awesome and well received.. It would actually be more difficult, probably, in Cinci or Cleveland. Well maybe not Cinci, they're like an alien race, and to qualify that, I live in Kentucky, so research is still ongoing here. Who the hell knows. Like anything though, location would be key. Think 45 minutes to an hour from the stadium on game day.

was cooking a Jambalaya a little earlier, and had the thought that food like this would probably sell well outside of Southern Louisiana.
just need to find a chef, location, and business loan.

the only decent cajun food in this city is my gumbo. We have J. Gumbos around, but there're not worth it. If nothing else, a place to get decent spices and fresh bodin would be a great.
really good fresh boudin ain't as easy to find down here as you would think.

yeas every swinging dick around sells boudin, but not all of it is really good.

gotta head way out west toward Lafayette for the good shit.
got some killer cracklin out that way to.
