It wasn't a theater movie, but the best war movie I have ever seen was the HBO Series BAND OF BROTHERS. I have watched the entire series at least 3 times. When they showed what Easy Company of the 101st Airborne went up against in Europe and more specifically the Battle of Bastogne I could barely breathe during those episodes. If you have never seen this series, I definitely recommend it.

Killing Fields was a great movie, but I don't know whether I'd strictly call it a war movie. Red Dawn was more cartoon than war movie.

Some of my choices would be...

Band of Brothers (best mini-series since Roots)
All Quiet on the Western Front (also one of the great anti-war books of all time)
Das Boot
Lawrence of Arabia
Letters from Iwo Jima

For pure fun, I've always loved Where Eagles Dare.
