Interesting, per my dictionary it IS pronounced more like "car" than like "care". The dictionary has an a with a little concave dash over it and gives examples for that phoenetic symbol of "pat", "plaid", "half", and "laugh".
But I still MIGHT be a redneck . . .
Does a 'concave dash' look like this?
care Pronunciation Key (kâr)
But dictionary.com does list 'gar' with 2 dots over the 'a' (like 'car') as a secondary pronunciation for guarantee.
