Thai green curry. What a pain. But at least now I have enough curry paste in the freezer to make a couple more batches before covering the kitchen in cilantro, basil, chilis, and galangal again.

how different is that taste of galangal from ginger? i've never used it...

Quite different to my taste. I’m not even sure how to explain what it tastes like — it has a similar spiciness to ginger when it’s raw, but the flavor is so distinct. I had a bit of galangal ice cream last fall and it immediately jumped out at me as a new flavor I had never tasted before. More medicinal in flavor than ginger?

medicinal is in "herby" (like basil) or "flowery" (like lavender) or some other spice notes (like cinammon)? i guess i'll need to go find some... we use ginger a lot, and it's a staple in everything asian.

More flowery than herbal. Internet says like ginger but more “earthy” and “woody” for whatever that’s worth.
