Whats the ambient in the grill and waht temp is the brisket?

(Also, remember why crutching works... It basically is keeping it from sweating so it also helps it retain moisture which keeps it juicy, you're not gonna be short on smoke there)
brisket probes are at 167 & 179 right now. ambient in the grill. id need to check. but the smoker is set for 225

Well, I was going to mention that you probably could wait till 1-2pm for the crutch because shit was gonna go down at an alarming rate.... But I didn't and you already did it. So, here we are. :)
