Hey folks, it's still winter, so I might have missed it, but does anyone have a good/great soup recipe to share? Winter is soup season, although in Cali, I can grill year round. Wife just put together an outstanding beef barley last night. I'm fine with the beef, barley, and some diced carrots in a thickened beef broth, but she likes to put some potatoes in it. Very hearty, filling and great taste. Pair with a sour dough baguette (gotta sop up that gravy) and it makes a wonderful meal while the wind is pounding the house with 3-4 feet of snow outside. Also, at the golf club where I play, chef always has two hearty soups so I grab a cup at the turn. Current favorite is chile verde, (or beef barley), and the Friday clam chowder is always full of clams, and fewer potatoes. PS, beats hot dog or peanut butter crackers by a whole bunch, and few carbs.

It appears that you've elevated the good ol' traditional mac-n-cheese. Better than my bachelor boiling the mac, cutting up chunks of colby, pouring some milk in bottom of casserole dish, and banging 360 for 40 minutes. You da man! PS, some would call adding bacon cheating, but the scallions negate that!
