I don't get the people bitching in this thread, dude took the time to share his chili recipe - cool move.

I read the recipe and it seems solid to me. I also make a damn good chili and the bases to both of ours are not too far off. He uses more meat, I use more beans and vegetables (dark and light red kindney beans, black beans, corn, onion, sometimes fresh green beans etc). We have some differences in spices, I don't use basil, oregano, or sugar. I use the rest with ancho chili powder, garlic powder, cumin, maybe some others. I also vary the heat according to who's eating it, but always have jalepenos, but may also go up to haberno peppers if it's just my regular guy group and not the wives.

Using canned tomatoes and canned beans is not a bad thing - unless you everything in your life fresh don't knock it. Green peppers and red peppers are awesome when slow cooked in this stew.

Thanks again, I may change up my next batch with a heavy influence of this recipe and see how it goes.

Btw, people who say "if there's beans in it, it's not chili" are narrow minded when it comes to this dish. carne only is good, but damn chili can be so much more with added flavor.

Haha, I KNEW I'd draw out some chili snobs in the house. "Oh...that's bean soup!" "Canned tomatos?! BLASPHEMY!" Chili is made a thousand different ways. I've never had a single complaint.

I make my chili with ground beef, canned beans, etc. I've won cook-offs before, got my name engraved on a plaque in some joint in Beaver Crossing, NE and at my church to prove it.

I also make my own chile powder, like Muck. It just has better flavor, and I can control what it tastes like. I only use Ancho chiles, though. Maybe I should branch out to other chiles next time.

Anyway, I took Muck's recipe book from Scribd and put the recipes (sans pics) into a Word file to go into my cookbook. If anyone wants it I'd be happy to host the file somewhere to share.

EDIT - I just went ahead and uploaded it. Here's the link: LINK

BTW anyone who says his 'chili' has more GREEN BEANS than ... well more than damn well anything ... would be better served to just sit back down and stay quiet.

Damn I wish you'd said something sooner. I have all the recipes in text form as well and could have saved you the trouble. :(

LOL, I would almost be offended - but you haven't tried it. And yes, I've won 2 chili cook-offs.

Cap City has a decent chili, which also has that ingredient.

Open your mind, you might enjoy something sometime.
