Carolina bbq ain't got no sauce, at least that is what I learned when I lived there......unless that is vinegar based basting sauce, but it looks to dark for that.... What's in the rub? What wood chips are you using? Just curious, I just smoked one last weekend (cayene, garlic, onion, black pepper, sea salt, olive oil, oregano, mesquite chips) and it was awesome.Pork shoulder is rubbed and wrapped and the sauce made and cooling. It's going on the smoker at 6 am, which should make it ready for the second half tomorrow. Carolina bbq.....the best bbq!
