There are going to be 4 matchups to choose from (OSU vs Miami being one of them). But you can only pick what game you play, not the specific teams. So if you wan't to play as OSU, you have to play vs Miami (and vice versa).
I'm guessing they are going to pick the big early season games. Like Penn State vs Bama, Boise vs VaTech. That will give them good diversity to show off their different offenses as well.

It appears that they've added colored upper arm sleeves and those skinny muscle bands players seem to like so much.

Clemson - Missouri is in the demo, I don't think they've announced the final pairing. Most expect GTech and someone else to be the final pair to show off the new option gameplay.
Missouri will let users try out no huddle, quads, and maybe their alternate unis.
Every team so far has been from the pro combat lineup, though only a few using their unis:
