Turtle bacon hot dog burger? Not to ruin it, but how about thin out the meat in the middle and use a nice big kaiser bun as the shell? Load it up with onions and mustard. Better use some super lean ground beef for something like that and let the bacon fat work it's magic.

I'm making my own bacon with about 7 pounds of pork belly that I bought.

5 1/2 pounds will get applewood smoked on Saturday when it comes out of the cure.

The other 1 1/2 pound piece will get rolled, tied and hung for pancetta.
