I've always understood the "what" of rhubarb pie, I just never understood the "why"...

Why not? I've been dabbling in pie-making over the last couple months. We finally got around to harvesting our rhubarb Saturday night, so I threw one together. It's certainly a different flavor, but it's a nice combination of sweet and tart.

We ended up giving half of it to our neighbors, so I'll probably make another one tonight if the weather doesn't permit gardening. :chompy:
