Was going to do some chili, but figured I might be able to con my two little boys into watching the game if they get to make their own dinners. We have all the stuff for subs. They can make whatever they want and hopefully we can all just plop down in front of the TV and enjoy the game.

I was at the store last night and it was funny watching everyone load up for the game. One guy had a cart full of lettuce and lunchmeat. I guess that was his responsibility for the party he is heading to.

By the way, the jumbalaya sounds great.

BIM, I got this recipe off of my uncle who made it when were on the Isle of Palms in Charleston, SC a few summers ago. You can add in ham, fresh shrimp, or whatever else, but this is the basic recipe.

Chicken broth--2 large cans, 2 small
1 package Eckridge Sausage
1 package Eckridge Kielbasa
3 lbs boneless, skinless chicken
1 green pepper (diced)
2 medium onions (diced)
16 oz mushrooms
5 cloves garlic
24 oz tomatos (crushed, stewed, whatever)
5 TBSP Cajun Seasoning (add more to taste)
4 cups of rice

Cut the chicken into cubes or small chunks, the kielbasa and sausage into small slices, and brown all of it together in a large skillet. Meanwhile add everything else (except the rice) in a large pot. Let the broth and vegetables simmer while the meat browns. After the meat is browned sufficiently, add it to the pot and bring it to a boil. Add the rice and keep the heat on for one minute then remove from heat and cover. After 30 minutes, open the pot and stir it up.

Nice and easy.

too funny grad....

i made a big batch of jambalaya on thrs and it lasted through yesterday....

instead of two types of sausage i substitute small shrimp and instead of mushrooms i load in celery and garlic...

also.....the longer you cook it the better...


i love jambalaya...


today is slow smoked/grilled chicken breast in chipotle sauce with spicy rice and beans...

i love to cook....

Mini tailgate for us here..... beer brats and burgers. I'll have some regular brats for the kids. I'm also trying out a new recipe I found last week... stuffed Jalapeno Poppers wrapped in bacon. If the poppers are a hit tonight I'll be adding them to my Saturday menu come next football season.
