Of course coaches have the hard decision of 5th year, fully mature, familiar with the system, 3rd string player ; or the unknown development of a HS Senior.
It also makes a difference if the guy's able to graduate in 4 years. If a guy has his degree but has a year of eligibility left, I don't think it's a harsh move for a coach to let the guy know that it's best for the team if he moves on.
