Question about cooking Tilapia

I like to mix flour, salt, pepper, seasoning salt, garlic salt, and basil in a bowl. Dip your fish in either a milk and egg or just egg mixture and then cover in the flour mixture. This is a good batter that isn't too thick (which you don't want because the tilapia is mild enough as it is). Put some vegetable oil in a frying pan and cook on each side until browned.

Coat it with some Cumin, garlic, salt, pepper and Lime juice. Sear it in a pan for a couple minutes, chop it up and make fish tacos with whatever toppings you like. Easy and yummy.
I prefer roasted tomatillo salsa and a little cheese.

One of my favorite tricks for fish is to wrap each fillet in foil and let each person add their own ingredients. I usually cube some potatoes, add some olive oil, rosemary, garlic, onions, a lemon wedge, add the fillet, and close it up and throw it on the grill. That way you can get the fish and potatoes together in one "dish" and everyone can prepare their own. I've had people use just about everything when I prepare it like this.

One recipe we used recently was a Parmesan cheese, olive oil and parsley coating, browned on each side for about 2 minutes, add the mixture and then cook each side another minute.
