Because the show aired pre-Maury Povich made "I'm your real daddy" famous....

But really they did do a DNA test - From WIKI

Nicole's actual paternity was never revealed on the show. However, in one episode, Michael and Joey had a DNA test run to determine which of them was Nicole's biological father. She destroyed the results before opening them as she was happier not knowing who the father was (the test was conducted against her wishes). Judge Margaret W. Wilbur (Stanley) would later look at the results, but threw them away afterward and never revealed them.
