This is getting into bluegrass territory, but I also love String Cheese Incident's Lonesome Fiddle Blues.

SCI is sooo 90s
hehe, my wife and I are kinda off the String Cheese bandwagon these days, though we certianly see a lot of shows between '98-'03.
Oh, and Lonesome Fiddle is a cover, Sushi - but you probably know that.
Their 'Black Furry Possum' is a good one - a revamped cover of the classic 'Blackberry Blossom'.
Mauna Bowa (another cover) is my favorite SCI instrumental.
