Crab Bisque:

4 snow crab clusters
corn cut from 3-4 fresh ears
about a 3/4 cup of butter
about a 3/4 cup of flour
3 celery stalks
2 carrots
1 bell pepper (your choice of color, I like red)
1 medium white onion
1 bunch of fresh parsley
3-4 quarts of crab stock (recipe below)
1/2 tablespoon old bay
1 pint heavy cream

Crab Stock:
Steam crab clusters for 6-10 minutes or until hot
Retrieve crab meat from the legs of the clusters (reserve meat for later)
Put all the shells and clusters, in a pot with 4 quarts of water. Put the carrots and 2 of the celery stalks in pot after breaking into a couple of pieces. Boil for an hour. Strain through a cheese cloth.

Bisque:
Start with a trinity (equal parts chopped onions, celery and bell pepper) sauteed in a pan with some butter. Add the rest of the butter and the corn. When the corn softens add the flour and make a light brown roux. Add half of the crab meat, chopped parsley, old bay and the crab stock. Let that cook down on medium heat till it starts to thicken. Fold in the rest of the crab meat, add the heavy cream and cook for about 5 minutes and serve with toasted baguette.

Have some in the freezer waiting for cold fall evening.

4-5 pounds shrimp
4 pounds crab legs
3-5 lbs potatoes
3 packages kielbasa
6-8 ears of corn
1 Large onion

Heat a large pot of water over an outdoor cooker. Add Old Bay and 1 beer...bring to boil. (Old Bay and others also make seasoning packets that work well).

Cut potatoes in halves or thirds. Half the onion. Cut Kielbasa in 1 inch chunks. Cut corn into thirds or fourths. Devein and butterfly shrimp. Add potatoes, onion, and kielbasa to boiling water and cook for 10-15 minutes. Add corn and crablegs..cook for another 5-10 minutes. Add another can of beer. Add shrimp to boil for 3-5 minutes.

Drain water then pour contents over newspaper.

It's a southern meal. They take and eat the food with SEC speed. It technically never hits the newspaper.

if its a southern thing whys it take 18-30mins to cock?

unless half that time is spent "reckon" "fixin to" and sitting on the porch...

You figure out a faster way of cooking 5lbs of potatoes, 5 lbs of shrimp, 4 lbs of crab legs, 3 kielbasa's and 8 ears of corn, you let me know.

1 tablespoon fresh lemon juice
1/2 tablespoon soy sauce
1 teaspoon sugar
2 tablespoons olive oil
10 oz mushrooms, quartered
1 tablespoon unsalted butter
1 garlic clove, chopped

Stir together lemon juice, soy sauce, and sugar. Heat a 12-inch heavy skillet over moderately high heat until very hot. Add oil, then saut? mushrooms, stirring, until golden brown, about 5 minutes. Add butter and garlic and saut
, stirring, until butter is absorbed. Add lemon mixture to mushrooms, stirring until sauce is absorbed.

GREAT on steaks!

Very true...fortunately though, we have 11 out of 12 months to sit on the back porch and reckon we don't have to be freezing our nuts off to enjoy a little outdoor cooking :)

So when I'm tasting my newspaper shrimp in January, you can shovel your sidewalk one more time.
