I really provolone on sandwiches, especially turkey and provolone.

I rarely eat swiss unless its on a swiss mushroom burger.

I like a mild cheddar and colby jack.

Another Whole Foods favorite is Sottocenere al tartufo (had to google the name, can never remember it). It is made with truffles and has an ash rind, it's expensive but great stuff.
