How do you like your egs?

Poached, over Canadian bacon (or salmon), and toasted fork-split English muffins. With a reasonable amount of fresh hollandaise, maybe a dash of Tabasco. Some roasted/grilled/fried potato item on the side. With or without OJ/mimosa.

Then there's the childhood favorite, "eggs/bird in a nest". Center of a piece of bread cut out with a glass, the circle cut out then halved with the glass creating a moon and football. All bread lightly buttered, tossed in a pan, then an egg broken into the open center. Flipped, seasoned with some salt, pepper and a touch of garlic powder, served. Quick and easy.

Quiche. Any varietal, but made one last year that had caramelized onions, goat cheese, and a layer of pancetta (or was it prosciutto?) over it. So good. Probably took a week off my life expectancy though.

Soft-boiled with some toast ripped up into the bowl isn't bad, haven't had it that way in years.
