Yep. Omelets are a very close second as a yummy way to use up miscellaneous bits of meat, veggies, or cheese.

ditto. I prefer omelets, but it takes more effort, so over-medium has to be #1.

I was surprised with western omelets Sunday morning

Poached, over Canadian bacon (or salmon), and toasted fork-split English muffins. With a reasonable amount of fresh hollandaise, maybe a dash of Tabasco. Some roasted/grilled/fried potato item on the side. With or without OJ/mimosa.

Then there's the childhood favorite, "eggs/bird in a nest". Center of a piece of bread cut out with a glass, the circle cut out then halved with the glass creating a moon and football. All bread lightly buttered, tossed in a pan, then an egg broken into the open center. Flipped, seasoned with some salt, pepper and a touch of garlic powder, served. Quick and easy.

Quiche. Any varietal, but made one last year that had caramelized onions, goat cheese, and a layer of pancetta (or was it prosciutto?) over it. So good. Probably took a week off my life expectancy though.

Soft-boiled with some toast ripped up into the bowl isn't bad, haven't had it that way in years.

I love every type except raw, poached, and sunny-side up as long as they are cooked in butter or bacon grease (unless boiled).

If I'm cooking them sunny side up so that I can make sure they are done enough. If I'm at a restaurant I go with over medium so they aren't runny.

For omelets, it's a good addition for improving the consistency of the mixture. I wouldn't do it for flavor, though.

Well maybe people that like hot sauce don't like eggs so they put hot sauce on it b/c they think that hot sauce makes them taste good.

Maybe you should try it.

I have a slice of buttered white bread to soak up the yolk, and then I put extra yolk goo (the stuff that's not quite solid, but definitely not liquid) on a piece of wheat toast. Can't beat it.
