Cottage cheese that is small curd vs large curd is determined based on how it is made. In order for milk to coagulate and start to form curds it needs help from an enzyme or an acid. If a cottage cheese is labeled “large-curd” it means that the cottage cheese was specifically made from an enzyme called rennet. Small curd means that the cottage cheese was made from another method without rennet.

What is rennet? It is an enzyme formed inside the stomach of baby mammals like calfs or lambs. This means extracting it from a dead animal

Actually, now that I reread it are probably more in love with large curd.

Fuck cottage cheese. That shit ruined lasagna for me for 20 year because my mom used it instead of ricotta. Fucking gross.

I make "ricotta", technically just pot cheese because it's not recooked, based on this recipe: https://food52.com/recipes/11403-creamy-homemade-ricotta

I double the recipe, then add an oz. or two more buttermilk and a splash of white vinegar to increase yield and I do a full Tbl. of salt. Not a particularly healthy version, but it tastes amazing.
