Here's the deal, get one 10 lb bag for every 4 coaches.

Fry in corn oil or peanut oil due to the high smoke point. For classic buffalo wings; season wings with your choice of all or any of the following; season salt, garlic power, red pepper (cayan SP?), paprika. Fry over a high heat until the outside of the outside is crispt, turning once.

For a traditional fried wing combine the above spices with flour, wash the wings and dredge in the seasoned flour. cook over a slightly lower heat or you will burn the breading. As a matter of fact, once the wing brown turn the heat down to cook the wing all the way through.

Be sure to cook the unbreaded wings first as the excess flour in the bottom of skillet will burn if you do it the other way around.

OC's sauce would be super or just combine by volume 1/3 hot sauce with 2/3 real butter. Serve with ranch of blue Cheese dressing, celery and carrots are for girls.:biggrin:

Here's an easy Buffalo wing recipe (from Cook's Illustrated):

4 tablespoons unsalted butter
1/2 cup hot sauce, preferably Frank's Louisiana Hot Sauce
2 tablespoons Tabasco sauce or other hot sauce, plus more to taste
1 tablespoon dark brown sugar
2 teaspoons cider vinegar

(this is for 3 lbs wings)
