law of averages would call for .5-.75lbs per person - this will be on the high side so you will end up with left overs (thats a good thing :biggrin:)

Do you want to deep fry them or bake them? - baked wings will give a much better flavor IMO

per pound can range anywhere from 8-14 wings on average depending on size

do not coat the wings prior to deep frying - deep fry them until done (time will vary depending on oil temp, size, ect)

in a small sauce pan on medium heat, brown some minced garlic (until it starts getting golden brown) - then add butter to make a thin sauce - mix this with any seasoning you might like (i use Emril's Southwest seasoning, Red Hott, and fresh ground black pepper)

after wings have been deep fried - toss them in a bowl with the sauce and coat them - these wings are very good

Shake the wings with flour before you cook them to make the sauces stick better.

Sauce for 20 wings (I should charge for this):
3 TS of Chile Sauce (looks like ketchup)
1 cup of Louisiana hot sauce (like Frank's)
2 TS Parmesan cheese
1 TS lime or lemon juice
2 TS Corn syrup
1 TS melted butter or spray butter
1 TS Parsley flakes
1 ts Paprika
1 ts ground black pepper
2 ts chile powder

Mix well and shake the wings in the sauce to coat.

in my big eating days 107 was my high - we had a running deal on tuesdays (all you can eat night) where the low person had to pay for the winner's beer - i never bought beer

Did you go to Sharon for that? The original Lube is where my eating was at it's best. Back when they would give you the batch of 12 to start and then 6 every time you needed more. It took 2-3 hours to get up to the 100's.

My Wing Sauce:

2 Bottles of Crystal Hot Sauce
1 Cup Honey
1/2 Cup of Sesame seed oil
1 Lemon, Squeezed into sauce

Cook it til the honey liqufies into the sauce.

Batter and deep fry your wings, or, if you want to grill them, take 3/4 of the sauce and let the wings sit in them over night. Put the rest of the sauce into tupperware or some container. The next day, grill them up, and when you take them off, spoon a bit of the sauce over them, serve with ranch dressing. Best eaten while listening to the mellow rock that only a cigar box guitar can make.

yup, Sharon - i was there nearly every Tuesday from 2001-2004 with a group of buddies - now the AYCE is buffet style so that's kinda nice
