This is me shrugging. With enough trial and error (mostly error) from me, we can do anything we like.

Ideally I'd like to figure out a way where users can define for themselves what shows up there. But my kung-fu is weak.

Maybe you should waste a couple days of coding and create a page in the User CP that allows each user to choose which forums they want to show up in the most recent posts list. That would be freaking awesome.
