Just what I have heard from people who have worked there. Paste was the wrong word to use there, but they say it's like a white mound of clay. I looked it up and found this out from Snopes.com:

Someone who is less than familiar with what the product looks like upon arrival might mistake the gelatinous broth for the beef itself, then from there jump to the conclusion that the contents of the package is a gel or paste.

Thump, I worked in an Arby's for roughly 3 months while in high school. The hunk of meat comes out looking like a solid chunk of puke -- its about 20 pounds and its a light gray/white.

You then put it in the "oven" for a few hours and it turns brown, smells better and tastes yummy.

I eventually had to quit because of the smell of the raw meat as it was cooking. it was the most discusting thing.

Even though knowing what it lookes like raw and the smell, i still eat there on occasion but not very often.

Dude, that's because the meat is most likely boiled, it turns gray when you boil any beef.

Keep fighting the good fight, Thump. Arby's is good.

But too damn expensive.

I like the buttery, greasy 5 for $5 Rax sandwiches, but now I'm on the other side of town and rarely have reason to go over towards the Rax. Eat Arby's once a week though.

And yes, roast beef slabs look like hell when they're shipped, but it's been boiled & brined to precook, cure and protect the meat from bacteria.

Unless you've seen any cows around back of your local Wendys, McDonalds, Burger King, or whatever, I'd just leave that discussion alone. :wink2:
