I'm intrigued by that. I heard that it is only in a certain part of Louisiana that they do that? I don't know, but I'm willing to try it. I'd be interested in you guys' opinion on my chicken and sausage gumbo, my jambalaya (ham and andouille) and my alligator sauce piquant. My wife makes a killer Oysters Italienne and Rockefeller.

And of course washed down with Hurricanes

the potato salad argument is one as old as time itself.

do you put it IN your bowl of gumbo?
or eat it on the side?

families break up over these decisions.

Yeah, I find it darkens up considerably when adding onions. Or maybe it's just my perception. Do you use the entire Trinity in yours or just onions?

trinity plus garlic.
i usually chop a whole head of garlic to use.

add onions to the roux first. when they are about half way done, add the garlic.
then right about as your nose adjusts to that smell, add the celery and bellpeppers.

this will soak up a lot of your roux and it will turn to a sorta dry paste.
if you're making stew, just keep this moving so it doesn't stick and burn.
if you're making gumbo feel free to add a little liquid (water/beer/wine/whatever you're drinking) to keep it moist.

Audit: LSU discovered $1M overpayment to Brian Kelly in 2022


LSU accidentally overpaid Tigers football coach Brian Kelly by $1 million during the first year of a 10-year, $100 million contract, but discovered the error and has moved to correct it, the Louisiana Legislative Auditor's office said Wednesday.

Kelly was overpaid $1,001,368 in supplemental payments in 2022 because of duplicate payments made both to Kelly's LLC and to the coach directly.

The double payments began in May and continued until LSU officials detected the errors in November.

"LSU management and the head football coach have enacted an adjusted payment schedule so the amount of overpayment will be recouped by the conclusion of fiscal year 2023," the Legislative Auditor's report stated.

LSU exceeded expectations in Kelly's first season in Baton Rouge, winning the SEC West Division and finishing 10-4 after a 63-7 victory over Purdue in the Citrus Bowl.

I wonder if Kelly knew he was being overpaid......:lol:

Why does Kelly have an LLC they are paying?
One benefit is legal protection in a civil suit. Operating with an LLC or similar business can also shield a coach during potential litigation, see article (below):

I believe that in the unlikely event (of say) a scissor lift accident at LSU and somebody tries to sue Kelly for negligence over it, the LLC money is protected, etc.....:roll1:
