I can't take credit for it, but my favorite so far has been "Farmageddon". :)

Someone noted this name in an article on ESPN (Maisel perhaps?). I am not sure where it originated though.

Anyway, "Farmageddon" is not a popular title for the rivalry among the Huskers. :)

(They are totally not farmers-- they are corn engineers.)

Texas/Oklahoma are seperated by the red river, hence the "Red river rivalry"

Nebraska/Iowa are separated by the Missouri river so perhaps "The Missouri river rivalry"
